Movie night (The Wicker Man) and a Kipper with Green Peppercorn Sauce and Fried Courgettes
Good kippers (smoked herring) have a strong, assertive flavour and they can work well with bold sauces.

Finely chop 2 shallots, salt, and fry gently in a 50/50 mix of oil and butter until soft.

Add a tsp of crushed green peppercorns and cook for a few minutes.

Add a generous splash of unpeated whisky and hurl a little Dijon mustard in as well.

Turn the heat down and cook for a minute - stirring constantly.

Lob two tablespoons of crème fraîche into the mix and a knob of butter.

Fill a jug with boiling water and immerse the kipper for about 6 minutes.

Shake off excess water and it’s hot to trot.

Hot pan with butter, sliced courgettes dredged in flour, fry until golden - simple.

Drizzle with lemon juice to finish.
