Make the burgers with ground sirloin, jalapeños, red wine vinegar, finely chopped onions, crushed garlic, thyme, black pepper, Worcestershire and salt.

Caramelize the onions in a cast iron pot with butter, oil, salt and a very low heat for at least an hour, turning every 10 minutes.

Serve the burgers with caramelised onions, mash and peas.
