Galician Ribeye, Tomatillo and Herb Salsa and Baked Blue Cheese Mash

   Boil tomatillos for 10 minutes.

   Blitz everything very briefly.

   Add a little olive oil if it’s too thick.

   Make Baked Blue Cheese Mash with Maris Piper potatoes, white pepper, salt, unsalted butter and Cabrales cheese.

   Cook Galician Ribeye.
