Tortang Talong
A popular breakfast & lunch dish in Filipino cuisine, Tortang Talong is an aubergine omelette that can be stuffed with meat/seafood/veg.

Set airfryer to 200 degrees for 15 minutes. Lightly spray oil all over the aubergine and pop in, turning at halfway point.

In a shallow bowl, mix in all the ingredients above.

When your aubergine has slightly cooled down, peel off the skin (comes off very easy). Use a fork and flatten out.

Pop your aubergine into the egg mixture.

At a medium heat, add oil to the pan and lay your aubergine in. Pour in egg mixture and push inwards to the aubergine.

When mostly cooked, flip over and cook the other side.

Add to your steamed rice and garnish with ketchup or sriracha.
