A delicious and nutritious soup made from broccoli stems, perfect as a side dish or on its own with bread.

    Heat up a pan and melt the butter. On medium to low heat, sweat the onion, garlic, and salt. Cook until translucent but not browned, which should take around 3-5 minutes.

    Add the broccoli stems, enough water to cover, miso paste, and dashi powder. Boil for 5 minutes or until the broccoli is tender. Turn off the heat and blend using a hand blender or food blender.

    If you like, you can add collagen powder, then adjust the taste to your liking.
