Korean Spicy Braised Chicken

Add onion, garlic, chili pepper, soy sauce, gochukaru, gochujang, mirin into a food processor.

Pulse until finely minced.

Add chicken, spicy paste, and 1 cup water to a stock pot.

Bring to a boil then cover with a lid and lower heat to medium low and cook until tender, about 25-30 minutes.

Uncover and add potatoes, making sure to submerge in the liquid.

Cook until potatoes are tender and the sauce has reduced a little, about 10-15 minutes.

Garnish with green onion or perilla leaves and serve with rice.
