Cheesy Kimchi Fried Rice
My 17 yo ordered Cheesy Kimchi Fried Rice at our fave Korean restaurant so of course i had to come home and recreate it ~ so easy and so good!

Cook pork butt in a little oil until golden brown, set aside in bowl.

Add butter + more oil to the hot pan.

Cook kimchi + sugar until soft and golden orange, about 4 min.

Add pork + pork juices and cook until well combined.

Add cold rice and break up the clumps with a spatula, mix until well combined and the rice is soft and rehydrated.

Add hondashi, salt, pepper, sesame seeds, sesame oil and mix everything well.

Turn off heat, add cheese.

Cover and let the cheese melt in the residual heat, about 1-2 min.

Add green onion and enjoy immediately!
