Heat a little olive oil over the stove in a medium pot. Add your onion, garlic & ginger and let that get nice and fragrant.

Add your curry powder and tomato paste at this stage and cook off for a minute.

Add your veggies to the pan except for the peas & green beans. Let that cook off for 3-4 minutes.

Add your stock, coconut milk, coconut sugar and salt at this point & bring that to a boil.

At this stage add your prawns and let that bubble away for 3-5 minutes.

Add your peas, green beans and lime now and let that cook away for a good few minutes or until the prawns are cooked and the veggies are nice and vibrant and cooked.

Serve the curry over jasmine rice and with some Pappadums or naan on the side.
