    Preheat your oven to 220 degrees fan forced.

    Mix up your bang bang sauce and reserve a 1/4 of it in a seperate bowl to brush on the chicken.

    Add your chopped chicken to the bowl along with the marinade ingredients.

    Once coated add to a lined baking tray and spread out nice and evenly. You don’t want them overlapping so they all have the chance to get nice and golden and crispy.

    Add the chicken to the oven and cook for 25-30 minutes.

    In the meantime prepare your quinoa.

    Cut up all your veggies. I like to add the cabbage and carrot to a bowl and drizzle with 2 Tblsp olive oil and 2 Tblsp white wine vinegar and a pinch of salt, mix up.

    Add your quinoa, cabbage/carrot salad, cucumber, shallots, chicken and a drizzle of bang bang sauce to the bowl.
