Cheesy One Pot Bolognese Gnocchi

Add a good glug of olive oil to a shallow casserole dish over medium heat.

Add the onion, garlic, celery, carrot and a pinch of salt to the pan and let that get nice and fragrant.

Add your mince at this stage and cook it off until itβs nice and browned.

At about the halfway point of your mince cooking add your mushies and let that all cook away for a good 5 minutes.

Add your tomato paste, crushed tomatoes, stock, sugar and oregano along with a good two tsp of salt and pepper.

Cover with the lid and let that all bubble away for 10-15 minutes.

At this point add your gnocchi into the pan and cover with the lid again. Let that bubble away for 3-4 minutes or until the gnocchi is soft.

Give it all a good stir and add your mozzarella on top (sliced or pieces is fine) and cover with the lid and let that melt/bubble away for 2 minutes.

Serve with a good crack of pepper and parsley if you wish.
