Healthy Carrot Cake Muffins

Preheat your oven to 180 degrees fan forced.

Add your carrots to the blender and blend up. If your blender isn’t strong enough grate first and add to blender.

Add all of the other ingredients except for the sultanas/cranberries and blend up.

Add your sultanas or cranberries and gently fold through.

Add to a lined/greased muffin dish. You can do 12 regular muffins or 6 large muffins.

If doing 12 regular muffins bake for 15-17 minutes. If doing 6 large muffins bake for 20-23 minutes or until a skewer comes out clean and muffins are lightly browned on top.

Smear with some butter and enjoy or enjoy on their own.

Store in the fridge so they are nice and cool when you eat them.
