Boil the potatoes.

Spray cooking oil on a parchment paper sheet tray.

Lay each potatoes and smash them gently with a flat bottom cup.

Spray more cooking oil over the potatoes.

Air-fry them for 25 mins or until crispy.

In a bowl, put together the basil, pistachio, chili flakes, garlic, parmesan and black pepper.

Heat up extra virgin oil.

Pour the hot oil over the basil mixture.

Add lemon juice.

Once the potatoes are done, add burrata and the garlic basil chili oil over the potatoes.
