Baked Cod with a lemon and Parmesan crust and pesto crust new potatoes and peas

Try and make the potatoes all the same size, i.e cut the larger ones in half, this will ensure the cook at the same rate.

Add the potatoes to a saucepan and cover with cold water, add a good amount of salt and bring to the boil. Cook for around 15 minutes until tender. A good test for this is to stab a potato with a knife, the potatoes should easily slide off.

Drain the potatoes and gently crush with the back of a fork. Add the pesto, peas and a good amount of salt and pepper and mix through.

Mix the breadcrumbs with the grated Parmesan, lemon zest, chopped parsley, salt, pepper and oil.

Pat the cod dry with a paper towel, lightly coat in mustard and spoon on the bread crumb mixture and press down.

Bake for 10 minutes 200 degrees C.

Plate up - a couple of spoons of the potato and pea, add the cod on top and garnish with extra parsley, extra lemon zest, crack black better and a drizzle of extra virgin olive oil.
