Strawberry Glazed Pistachio Blondies
These strawberry glazed pistachio blondies are about to be your new best friend

If using frozen strawberries: place frozen strawberries In a small saucepan (or microwave) and heat until soft enough to be squashed.

Remove strawberries from the heat and roughly mash them. Drain the strawberry juice from the strawberry solids into two seperate bowls.

Pre-heat oven to 170°C + line a 20x20 baking tin.

In a bowl, mix together wet ingredients. Then, add in the dry ingredients.

Add in strawberries and half of the melted pistachio cream. Combine to form a batter.

Pour half the batter into your lined tray, add a layer of remaining pistachio cream and top with remaining batter.

Place in the oven and bake for approx 20- 25 minutes. Remove once slightly golden.

Allow to cool before topping with strawberry glaze!
