Strawberry Jam Donut Loaf
a hot jam donut but make it cake… an absolute need

Add strawberries, maple syrup & lemon juice to a saucepan over medium- high heat. Allow to soften. once soft, mash sporadically with a fork (can leave some texture). Remove from heat and set aside.

Pre heat oven to 170°C + grease & line loaf tin (1L)

Combine dry ingredients in one bowl & wet ingredients in another. Add wet mixture to the dry & mix.

Pour half of the loaf batter into lined tin, then pour over half of the strawberry jam. Use a spatula to create a marbled effect, then pour over remaining batter on top.

Top with remaining strawberry mixture & a little sprinkling of coconut sugar & cinnamon. Place in the oven.

Bake for approx 50-55 minutes, use a skewer to check when done. Remove once risen, golden and cooked.

Allow to cool before topping with a simple icing sugar glaze
