    Pre heat oven to 170°C + grease and line a baking dish (mine was 24x15)

    Combine dry ingredients in one bowl and wet ingredients in another. Add wet mixture to the dry and combine.

    Pour batter into your lined dish & bake for approx 15-20 mins or until slightly golden on top. Allow to cool completely before coating in the chocolate.

    Combine coconut oil, maple syrup & cocoa powder in a bowl & mix to incorporate. (Add maple syrup, 1 tbsp at a time, if it’s too runny)

    Cut your sponge into even sized pieces and coat each piece in your chocolate mixture followed by a generous coating of desiccated coconut.

    Repeat until all are coated & enjoy!
