Halloumi & Zucchini Veggie Loaf
My FAV recipe to meal-prep for work lunches.

Preheat oven to 180°C and line a 1L baking tin.

Add grated zucchini, capsicum, olives, peas, halloumi, and kale to a bowl. Stir until well combined.

Add in eggs, flour, baking powder, olive oil, dried herbs and season with salt and pepper to taste.

Incorporate all ingredients together.

Pour the mixture into your baking tin.

Bake for 35-40 minutes or until the slice is golden and set in the centre.

Let it cool slightly before slicing.
Notes
Serve warm or slice & freeze for future snacking
