Vietnamese Lemongrass Chicken Rice Bowl

The addition of lemongrass into marinades is sooo good, and it’s an ingredient that I used to be a bit scared to use but it’s actually so easy to incorporate into dishes and to keep fresh! (wack it into your freezer after mincing 🤣) so of course this dish is one i always make on repeat. It’s inspired by bun ga nuong which is grilled lemongrass chicken & rice noods and also tastes AMAZING

    Marinate chicken thighs for at least 30 mins but overnight is better!

    Pan fry on a pan over medium high heat (only frying the chicken and leaving any marinade behind), pan fry for 4 mins one side before flipping and browning the other side, around 8 mins or until cooked.

    Then add in the reserved marinade (if any left) and allow that to bubble and coat the chicken

    Serve with rice, cucumber, coriander, fried egg and nuoc cham
