Spiced Prawn Momo Served with a Goan Prawn Curry-Inspired Base
A fusion dish inspired by Nepalese jhol momo and Goan roots, featuring spiced prawn momos served with a Goan prawn curry-inspired base.

In a bowl, mix the dough ingredients until well combined, making sure to knead for around 5-8 minutes. Then cover and let rest for 30 minutes.

In another bowl, add in the filling ingredients followed by hot coconut oil and mix until combined, keep in the fridge while working on the masala.

In a grinder/blender, grind all the spices first before adding the grated coconut, tamarind plus the water it’s soaking in, ginger and garlic. Grind well until a fine paste, can take around 5-10 minutes depending on blender

In a saucepan over med-heat, add some coconut oil then pan fry onions, followed by some ginger paste until it turns translucent, then add the chopped tomatoes. Cook until soften, around 5-7 mins

Add in the grinded masala, ½ tsp salt plus some water (around ½ - 1 cup) and let it simmer for around 10-15 mins.

Taste and adjust to liking (can add some vinegar to make it a bit more sour, or some salt/sugar to balance the flavours). Once adjusted, remove from heat and let cool slightly
