Crispy Tofu Tzatziki Wrap
Back with another Nourish Wrap and this one is sooo delicious! It’s great for protein, so give it a try for your next lunch.

Firmly press the tofu to remove any water and slice into 1 cm thick rectangle strips and set aside.

In a shallow bowl combine the flour, water, salt, oregano and pepper, and in a separate bowl add the bread crumbs.

Dip the tofu into the batter and drip any excess off, then toss it in the bread crumbs, pat down firmly and place on a plate.

Place a frypan over high heat and add enough cooking oil to shallow fry. Once the oil is hot add in the tofu pieces and cook until lightly golden on each side. Once ready set aside onto a paper towel to remove any excess oil.

Add the tzatziki ingredients in a bowl and mix together.

Heat the wraps in a pan or microwave to soften.

Add the tzatziki, avocado, lettuce, tomato, onion, pomegranate, tofu and fold it up.

If you like, place the wrap in a pan over high heat for 1 minute each side to lightly toast (or in a sandwich press). Enjoy!
