Duchesse Potatoes
Pommes Duchesse (or Duchess potatoes) are basically fancy mashed potatoes turned into glorious little golden swirls. They’re absolutely delicious and deceptively easy to make! They’re a perfect side to any roast dinners and can be served instead of roast potatoes.

Preheat the oven to 200℃ (180℃ fan-forced). Place the unpeeled potatoes in the oven and cut off the top of the garlic bulb. Drizzle the garlic with oil, wrap it in foil, and place it in the oven alongside the potatoes. Roast until both the potatoes and garlic are very tender, about 50 minutes.

Once cool enough to handle, squeeze the confit garlic into a ricer along with the scooped potato flesh and transfer to a large mixing bowl. Add the room temperature butter, salt, pepper, nutmeg, and Parmesan. Stir until well combined and let cool for a few minutes. Mix in the egg yolks one at a time.

Line a large metal tray with baking paper. Transfer the potato mixture to a piping bag fitted with a large star tip and pipe swirls onto the tray, spacing them evenly. Brush the tops with extra melted butter. If you don’t have a piping bag, simply dollop with a spoon.

Bake for 10 minutes or until the edges are golden brown. Garnish with chopped parsley or chives and serve immediately.
