These accordion-shaped potatoes are like hasselbacks, but even better! They’re super tasty and fun to pull-apart and nibble on!

    Preheat the oven to 200℃ (180℃ fan-forced). Cut the potatoes into rectangles (about 2 per potato) and slice one side vertically and the other side diagonally. To prevent cutting all the way through, place chopsticks on either side of the potato as a guide. Off-cuts can be used up in a hash, mash or soup.

    Brush the potatoes with melted butter and season generously with salt and pepper. Roast for 45 minutes, basting with pan juices and flipping every 15 minutes.

    Before serving, sprinkle with additional salt, pepper, and fresh parsley.


Notes

If you want to make the Chimichurri dipping sauce, simply mix some finely chopped parsley, minced garlic, olive oil, red chili flakes, salt, pepper and red wine vinegar
