Mix the yeast with 2 tbsp flour, 3 tbsp milk, and 1 tsp sugar. Rest for 20 min covered on a warm place.

Add the poolish to the flour and melt the butter in the milk and add the water to have a lukewarm mix.

Add it to the flour and mix until the dough is smooth.

Let it rest for 30 min under a cover in a warm place.

Knead the dough again and cut it into 10 pieces.

Roll each to approximately 40-50 cm long rolls with thin ends.

Take the ends and twist them twice and press the ends onto the middle of each pretzel (they need to stick to hold the shape).

Let the pretzels rest for another 15 min under a cover.

Prepare the bath. Bring 1 L water to boil and add the baking soda. Take from heat.

Dip each pretzel for approximately 30 sec into the bath.

Return them to a baking tray and sprinkle with salt.

Bake them for 15-20 min at 220 degrees.
