Pumpkin Frosted Sugar Cookies

These pumpkin cookies are super soft and easy to make! They remind me of pumpkin pie in cookie form!

    Preheat oven to 350°F. Line two baking sheets with parchment paper.

    Combine butter and brown sugar and beat till smooth. Add in eggs and vanilla extract. Beat for another minute. Add in pumpkin purée and continue to mix till combine.

    Combine all dry ingredients in a bowl and slowly add to wet mixture. Beat till combine and cookie dough forms. Put in fridge for 10-15 minutes to chill.

    Combine sugar topping in a small bowl. Using an ice-cream scooper, scoop out dough onto parchment paper and roll into ball. Bake for 10-12 min. About 6 minutes in press cookie down using a back of a spoon or measuring cup. Cool for the remaining time.

    Take out to cool on cooling rack and make frosting. Beat butter till fluffy, add in powder sugar, all spices and a splash of milk.

    Frost cool cookies and sprinkle some more sugar on top!
