Vegan Nachos
Rich, cheesy and beefy nachos that will fool any non-vegan

Fry off one white onion and 4 chopped garlic cloves, add 1.5 tsp of brown sugar to caramelise before adding your vegan mince.

Let the mince brown off before seasoning with 1 tsp cumin, smoked paprika, onion granules and oregano.

Add a dash of dark soy sauce, 1 tbsp of tomato purée with 200ml of vegan beef stock.

Followed by lashings of fresh coriander and lime juice.

Finely chop tomatoes, red onion, pineapple, coriander, chopped jalapeños, add some minced garlic, lots of lime juice, olive oil, salt and pepper for the pico de gallo.

Mash your avocado, add lime juice, salt, pepper and olive oil for the guacamole.

Layer the nachos adding all ingredients to each layer, and popping into the grill after each layer.

For the final layer, add red pickled onions, fresh coriander and LOTS of jalapeños.
