    In a bowl, put the eggs, honey, vanilla extract, olive oil and whisk it.

    Add the shredded apples, almond flour, baking powder, cinnamon, and cardamom.

    Whisk it all together until it becomes a unified mixture.

    Using an olive oil spray, grease the Bundt cake pan and sprinkle the sugar.

    Pour the cake mixture evenly into the pan.

    Bake it in the oven on 400F for 25-30 minutes.
