    Spray your chicken breasts with olive oil spray and season with plenty of salt and pepper; add to an air fryer for 12 to 15 minutes at 185c or until cooked through.

    Once the chicken is cooked, set aside, then add in your halloumi, spray with cooking spray, and air fry at 190c for 7 to 8 minutes until golden brown. For the last few minutes add in your ciabatta (again with a spray of cooking spray) to let it get toasty.

    Mix together your mayonnaise and pesto, then spread half onto the bottom of the ciabatta. Top with your spinach, cooked chicken, tomatoes (season them with salt and pepper), then add your halloumi.

    Spread the remaining pesto mayo on the top slice of ciabatta, then pop on top of your sandwich.
