Chicken Carbonara

Add your breadcrumbs to a plate then season heavily with salt, pepper, and your garlic granules.

Dip your chicken pieces into your beaten egg then into the breadcrumb mix; gently press the new into the chicken pieces to make sure they fully stick.

Add to your air fryer, spray the chicken really well with some olive oil spray and air fry at 185c for around 18 minutes, or until the chicken is fully cooked through.

In a small bowl, add your egg yolks, grated parmesan and a really generous amount of black pepper, give it all a good mix, and set it aside.

Heat a pan until hot, then add in your chorizo and fry over a medium/high heat until the delicious oils render out and it’s nice a little bit crispy.

While your chorizo is cooking, cook your orzo in boiling, generously salted water for about 6 minutes; then drain but be sure to reserve about a mug full of the pasta water.

Remove the pan from the heat, then add in your egg and parmesan mix and stir really well, and keep stirring until the you have a silky, creamy texture.

Serve it up in big bowls, top with the cooked chicken, extra Parmesan, then on dive in
