    Brown your onions with a little cooking spray over a high heat; cook for a few minutes until soft then add in your beef and allow to brown for another few mins.

    Add your garlic and dried oregano along with a good pinch of salt and pepper, and cook for another couple of minutes.

    Add your pasta sauce, chopped tomatoes and stock, then mix well and allow to bubble for a couple of minutes before adding in your tortelloni.

    Pop on a lid and allow to cook for a few minutes until the tortellini is tender, then remove from the heat and add in your mozzarella and Greek yoghurt.

    Stir until the cheese has fully melted, then serve up in big bowls with your ricotta, parmesan and fresh basil.
