Chicken, Chorizo & New Potato Traybake
So this recipe is based on one I’ve made for a long time, and I didn’t think it could get tastier, but this one was something else. It is the easiest dinner in the world, involves only one dish to wash up, and is just perfect for a chilled night on the sofa.

Tip your potatoes, chorizo, onions, peppers, 1tbsp olive oil, and a tsp each of your garlic granules, paprika, oregano into a large ovenproof dish, along with a good pinch of salt, and give it all a good mix.

Make sure the veggies are an even layer, then pour over your beef stock and the transfer to the oven and bake at 180c for 25 minutes.

While that’s in the oven season your chicken thighs with little olive oil spray, and the remaining tsp of garlic granules, oregano and paprika; mix until fully coated.

After 25 minutes nestle the chicken on top of the potatoes and return to the oven for a further 30 to 35 minutes, or until the potatoes are golden and tender.
