One Pan Buffalo Chicken 'Enchiladas'

    Spray a pan well with cooking spray and add in your chicken; fry for around 8 minutes over a medium to high heat until it is almost cooked through.

    Add in your garlic granules, fry for a minute or two to coat the chicken and then add in your onions and peppers; add in a good pinch of salt and allow to cook for another 5 minutes until the veg has softened.

    Pour in your passata, your buffalo sauce and about 50ml of water, then stir well and allow to simmer; one simmering add in your tortilla strips and use you spoon to submerge them in the sauce, and allow this to cook for another couple of minutes.

    Sprinkle over your cheddar, pop a lid on and allow to bubble over a low heat until the cheese has melted, before simply topping with your fave toppings.
