Spray a pan well with cooking spray, then add in your pork mince, and cook over a high heat for around 5 minutes until crispy at the edges. Add in 1tsp of your gochujang, garlic granules and soy sauce, along with a small splash of water, and cook for a further couple of minutes until sticky.

While the pork is cooking, add your mayonnaise, ramen seasoning packets, and remaining tsp of gochujang (if using) to your serving bowl and mix well.

Cook your ramen noodles according to the package instructions, and add in the pak choi to the same water.

Take a couple of ladles of the noodle stock and add to your paste, mix until you have a silky broth, then add in the remaining noodle water.

Top with the pork and pak Choi, and any other toppings you fancy.
