Creamy Cajun Chicken & Chorizo Butterbeans

A delicious and comforting one-pan meal made with chicken, chorizo, and butterbeans in a creamy Cajun sauce.

    Coat your chicken breasts in your olive oil + 1 tbsp of Cajun seasoning; mix until well coated.

    Heat a pan to a medium high heat, spray with a little cooking spray then add in your chicken; cook for a few minutes a side or until fully cooked through, then set aside.

    To the same pan you cooked the chicken in add in the chorizo and fry for a few minutes until crispy, then add in the onions and continue to cook for a further 5 minutes until softened.

    Turn down the heat slightly then add in the tomato puree and remaining tbsp of Cajun seasoning, along with the garlic, fry for 2 minutes, then add in the beans with their stock.

    Allow to bubble for a couple of minutes, then stir through your Creme fraiche, taste for seasoning, top with the cooked chicken, then serve.
