Creamy Broccoli & Cheddar Soup

    Add your butter to a large saucepan, allow to melt, then add in your onions along with a pinch of salt; cook over a medium heat for 5 minutes until softened, then add in the garlic.

    Cook for a further couple of minutes before adding in the paprika and thyme, plus plenty of black pepper; cook for 2 minutes.

    Add in your flour, and continue to cook over a medium heat for a few minutes to get rid of the raw flour taste, then slowly pour in your chicken stock. Turn the heat down, cover, and allow to simmer for 10 minutes.

    After 10 minutes, pour in your cream and milk, allow to simmer for 5 minutes, then turn the heat down to low, and gradually add in your cheese until fully melted. Add in the broccoli, pop on a lid, and cook for a further 5ish minutes until tender.

    Taste for seasoning, top each serving with 2 bacon medallions, some extra cheese if you like, then tuck in and enjoy.
