Chicken, Leek & Bacon Mash Pie Yorkshire Puds
If there are three things I crave when the weather gets cooler it’s chicken and leek pie, mash, and Yorkshire puds…so I thought why not combine all three

To a cold pan add in your Bacon, turn the heat up to high and allow to cook for a few minutes until crisp and the fat has rendered out; add in your leeks and cook for a further few minutes until tender.

Next add in your flour and allow to cook for a couple of minutes to get rid of any raw flour taste.

Pour in your stock slowly, mix well then add your crème fraiche, thyme and a good amount of black pepper; stir until smooth.

Add in your cooked chicken and taste for seasoning.

Add your yorkshires to an ovenproof dish and fill them each with a generous spoonful of the filling. Top each on with your mash and use a spoon to press down slightly.

Sprinkle over your cheese and bake at 200c (fan) for 20 to 25 minutes, or until the cheese is golden and crispy
