    Heat oil in a wide-bottomed pan, add the onion, and fry on low for 10 minutes until soft and browning.

    Add garlic and fry for 30 seconds, followed by spices and carrots for 2-3 minutes.

    Stir in tomatoes, lentils, balsamic syrup, Worcester and soy sauce, tahini and veg stock. Bring to a boil, then simmer on low for 40 minutes.

    Turn off heat, add fresh thyme and olive oil, and stir. Season.
