Greek Style Beans
Served with the fluffiest za’atar flatbreads and a good drizzle of runny tahini.

Heat up olive oil and add the onions, garlic, celery and carrots and sauté for 8-10 minutes until veggies are tender. Make sure and season with salt and pepper.

Then add the herbs, chili flakes, and oregano and sauté for another minute.

Then add the tomato paste and sauté stirring well for another minute.

Pour in the tomatoes, water. Simmer for 20 minutes.

Finally add the beans, maple syrup and sea salt and stir to combine.

Below serving stir in the olive oil.
