    Sear 1 1/2 lbs of pork belly until browned. Set it aside.

    Remove some of the fat to sauté garlic and onion.

    Put back the seared pork belly and add 1 cup of soy sauce, 2 cups pineapple juice, 2 cups of water, 2 tbsp of sugar, 1 star anise, 2 dried bay leaves and tbsp of peppercorns. Simmer for half an hour or until the pork belly is tender.

    Add the 1 cup banana blossoms and a small can of fermented black beans. Simmer for another 5 minutes.

    Add the pineapple chunks and 2 tbsp vinegar. Simmer for another 5 minutes.
