Chicken Arroz Caldo
The youngest kid is feeling under the weather so I made Arroz Caldo. Very easy, super quick to make.

Saute aromatics until translucent.

Sear chicken until a bit brown.

Add fish sauce and cover for about 2 minutes.

Add rice and broth. Simmer in low to medium heat for about 15 minutes. Stirring occasionally.

Add the Saffron and turmeric powder. Simmer for another 10 minutes.

Add more broth or water if needed depending on your prefered consistency.

Add salt and pepper to taste.

Transfer to a serving bowl and topped with egg, fried garlic and green onions. Enjoy!
