Ginataang Mungo
can also be prepared as a dessert in Filipino cuisine. In this version, the mung beans are cooked with coconut milk, sugar, and sometimes sweet potatoes or bananas or jackfruit until they become soft and creamy. It’s a sweet and comforting dessert often served warm or chilled, and it’s commonly enjoyed as a snack or after-meal treat.

Pan roast the Mung beans until brown.

Using a mortar and pestle or a processor, grind the beans until they are coarsed.

In a pot, pour in 2 cups of water and 2 cans of coconut milk. Bring it to a boil.

Add the ground mung beans into the boiling mixture. Simmer for about 10 minutes.

Add the rice and cook until the rice is soft.

Add the Pandan leaves, sugar, coconut cream and jackfruit.

Let it simmer for about five minutes.

If you think you need to add more water for your desired consistency, add more water.

Transfer to a serving bowl and serve hot or cold. Enjoy.
