Popular grilled chicken dish in the Philippines often served with atchara and unli rice!!

Marinate chicken quarters with the ingredients for about 6-8 hours in the fridge.

Poke and slice the chicken to make sure the marinade will get inside the chicken.

Grill the chicken for about 35-45 mins and baste the chicken each time you turn.

Transfer chicken in plate let it rest.

Served chicken with rice and soy-calamansi sauce for dipping. Don’t forget the chili.

Cut some fat and skin from the chicken.

Fry chicken skin in oil until skin is crispy.

Remove chicken skin add anatto seed let it simmer for a minute, and then add butter.

Strain and set aside.
