Homemade Chicken and Seafood Paella

No Paella pan? No problem!! I’m not saying it’s authentic, but this homemade Chicken and Seafood Paella hits the spot . It is vibrant-savory and brings together the rich flavors of chicken, seafood, vegetables, and aromatic spices.

    Sauté onion, garlic and tomatoes until translucent.

    Add the bell peppers, saffron, salt and pepper, smoked paprika, parsley and bay leaves. Cook for about 2 minutes.

    Add white wine and simmer until reduced.

    Add chicken and rice sear for a minute.

    Add stock. Do not stir. Give it a jiggle. Simmer uncovered in medium to low heat for about 20 minutes. Jiggle one more time when boiling. Do not stir. Add more stock if necessary for the rice to cook.

    Add seafood and cover it, cook for about 5 minutes. Turn off the heat and let it sit for another 5 minutes. There should have some burnt crusty rice under the dish. To achieve the perfect consistency.

    Transfer in a serving bowl with a squeeze of lemon. Enjoy!
