Roasted Chicken Rice

Fun fact: when you order roasted chicken rice, the chicken is actually deep fried to get the crispy chicken skin

    Combine marinade ingredients and massage on chicken. Marinade chicken skin side up, and leave uncovered in the fridge overnight to dry out skin surface.

    Option to blot skin with paper towels before roasting so it’s extra dry and season with salt + pepper, for ~extra kwispiness~.

    Preheat oven to 180 deg C. Bake for 25mins. Or until chicken cooks through.

    Meanwhile make rice! Rice + melted butter + grated ginger + grated garlic + sesame oil + salt + chicken stock. Stir to combine and cook at regular rice cooker settings!

    Once chicken is cooked through, allow to rest for 10 minutes before slicing.

    Plate rice, top with chicken, cucumbers! Serve with chilli sauce + chicken soup - done!
