Vegan Sausage Casserole

My favourite time of the year is finally here and it’s all about comfort food! I‘m always a bit unsure what to cook during summer but autumn is all about rich, comforting stews, casseroles and soups and I’m loving it!

    Fry your sausages and set aside.

    Next, fry the onion and pepper before adding the garlic.

  3. 3

    Once fragrant, add the chopped tomatoes, seasonings, water and wine. Stir everything and cook for around 20 minutes until thickened.

    Add the beans and sausages and cook for another 15 minutes.

  5. 5

    Stir in some fresh parsley and serve with some fresh bread.
