Chorizo and Butter Bean Stew

Perfect for cold and rainy days, this stew reheats perfectly and is great for a big batch.

Ingredients

Directions

    Fry the chorizo pieces until browned and set aside.

    Fry the onion and pepper followed by the garlic.

  3. 3

    Add the chorizo back in as well as the butter beans.

  4. 4

    Add all remaining ingredients (besides the lemon juice) and cook for around 20 minutes, stirring regularly.

  5. 5

    Adjust seasonings if needed and add lemon juice to brighten it up.

Reheats perfectly, great for a big batch.
