    Cook the macaroni until al dente and set aside.

    Melt the butter and add the garlic. Sauté until fragrant and whisk in the flour.

    Next, add the milk and cream a bit at a time. Keep whisking to ensure it’s a smooth sauce.

    Turn the temperature down and start adding the cheeses bit by bit. Make sure the cheese has melted before adding more.

    Once the cheese has been added, add the seasonings, taste it and adjust if needed.

    Preheat the oven at 180C.

    Now, fold in the macaroni into the sauce.

    Add the mac and cheese to an oven safe dish and top with remaining cheese.

    Cook for about 15 minutes before placing the mac and cheese under the grill and broiling it for another couple of minutes until browned.
