It’s #nationalcurryweek so naturally it’s time to share some of my favourite curries with you. This tofu paneer curry has been a firm favourite for a while and it’s super easy to make

Directions

    Preheat the oven to 200C. In the meantime, combine all ingredients for the Tofu

    Bake the Tofu for 20 minutes and set aside

    In a large pot, melt the butter and add the onion

  4. 4

    Add the garlic and ginger and cook until fragrant

  5. 5

    Add the seasonings and cook for another 2 minutes

  6. 6

    Now add the tomato purée and stir to combine

  7. 7

    Add the coconut milk and bring to a simmer

  8. 8

    Cook for 10 minutes to thicken the sauce before adding the cooked tofu

  9. 9

    Cook for another 5 minutes and serve with rice and Naan
