Roasted Tomato Soup
This truly is my favourite time of the year and a big part of that is eating all my favourite soups.

Add the tomatoes, onion and garlic to a roasting tray and drizzle with olive oil. Add the thyme, salt and pepper and roast in the oven for 1 hour on 180C.

Once the veggies are done roasting, add them to a blender and squeeze out the garlic. Add the stock and basil and blend until smooth.

Once the soup is blended, add it to a pot and cook for another 20 minutes. Right before serving, add the vinegar and season some more if needed.
