Pumpkin and Chickpea Curry
Perfect for a cold autumn night, this curry is a delicious combination of pumpkin and chickpeas.

Fry the onion until softened before adding the garlic and ginger.

Once fragrant, add all the spices followed by the chopped tomatoes and coconut milk.

Optional: blend the sauce at this point.

Cook the sauce for around 20 minutes before adding the butternut.

Cook until the butternut has softened before adding the chickpeas.
