One pot meatball orzo, perfect for cold autumn nights.

    Cook the onion.

    Add the red wine vinegar and cook until the onions have softened.

    Add the seasonings and combine.

    Add the chopped tomatoes, water and balsamic vinegar. Bring to a simmer, reduce the heat slightly and cook for 5-10 minutes.

    Add the meatballs and let them simmer in the sauce for about 10 minutes.

    Add the orzo and cook until the orzo is al dente. Make sure to stir regularly so the orzo doesn’t get stuck to the bottom.

    Add the Parmesan, parsley and relish, stir and serve.
